As a country person with some patches I won't share, I can sing their praises heartily. Their unique strong but sweet allium flavor messages truly that spring arrives. I have bought them a few times when I was in the city and served them during my restaurant careers with joy. But now I just harvest enough for a few meals and some pesto. I have mixed feelings about them being sold, when they are so difficult to cultivate. Most that make it in stores have been foraged, hopefully by a skilled harvester. Enjoy.
Thank you for this thoughtful comment! I'm envious of your ramp patches in the country, and am now dreaming about ramp pesto. I hear you on the mixed feeling about them being sold, though I'm personally so appreciative of the harvesters who bring ramps to us city folk!
