Here's another favorite recipe (from Nigella) that uses "the whole dang lemon" that your post reminded me of: https://www.nigella.com/recipes/one-pan-sage-and-onion-chicken-and-sausage. You squeeze the lemon for the juice, but then throw the "squeezed out husks" into the marinade as well.

I’m on board with the pairing of lemons with California sunshine. I’ve been in SF since January 1 with no intention of leaving what feels like an extended layover in paradise. On walks, the regular sightings of citrus trees loaded with fruit always zing me with a mouth pucker. There’s a hole in the wall eatery nearby that makes the best avgolemono soup I’ve ever encountered. It’s rather thick and satiny, and borders on chartreuse. My attempts to replicate it haven’t quite worked, but I’m keeping at it.

I am a die hard lemon fan too—and oh my goodness that lemon tree is just gorgeous. Much to the distain of my family I had a substantial phase of lemon zest and juice in my cherry tomato quick sauce and I would HIGHLY recommend. I love the extra tangy and nuance it complements the fresh sweet bursting tomatoes😍😍. I am also ALWAYS a lemon flavored fruit pie person versus a warming spices kinda gal. I could just talk about lemons all day and never get bored. GOOD LUCK MOVING IN!!! I miss you already!!

Hi there Phoebe! It’s always exciting to get your latest post. On this wet, dark, yucky winter day the idea of citrus and the color yellow are a welcome escape! Thanks for the inspiration. I love lemons in all forms too. From limoncello to a slice in my tea, to a drizzle on a simple pound cake, it’s something I love to smell and taste. I’ve got one in the kitchen just waiting to be called up for action. Good luck with the move and getting settled, while doing your trails! That’s exciting. I’ll look forward to hearing more!
