Hello and welcome! I’m Phoebe, the Brooklyn-based cook, writer, and illustrator behind The Dish.

My cooking style was shaped by my time at Ballymaloe Cookery School in Ireland and Alice Waters’s Rome Sustainable Food Project in Italy, where seasonality and sustainability reign supreme — as well as by working the line at my favorite restaurants in New York City, Cervo’s and Hart’s. As a writer and illustrator, I take inspiration from the kitchen above all else, which you’ll find reflected in The Dish.
I started writing The Dish in September 2021 as a way to share stories and lessons from my 12-week course at Ballymaloe. When the course ended, I kept writing — about cooking, eating, my life, and all sorts of miscellaneous recommendations and appreciations. Publishing this newsletter each week has become a personal ritual, a source of community, and an exercise in consistent creativity.
Almost every issue of The Dish will focus on food, but the format will vary. Most newsletters will fall into one of these categories:
Table Talk: Collections of dishes I’ve cooked and/or eaten recently, thoughts on making everyday life more delicious, and bits of kitchen wisdom.
Love Letters: Odes to particular ingredients or foods I love (like crème fraîche!).
Sweet Somethings: A mix of recommendations and personal notes. This is the most open-ended category — I might share a favorite restaurant, a TV show I’m enjoying, or a glimpse into my life. If you’re new here, Sweet Somethings is a great way to get to know me.
Menus: A monthly seasonal menu suggestion with recipes and tips to help you bring it to life. (Reserved for paid subscribers! $5/month or $50/year.)
